I have gotten back into the swing of things! Life can get you down sometimes, and when it’s snowing and cold, it can really get me down.
But now that the sun is shining more often and we have an extra hour of daylight, the cooking resumes!
Let’s start with my testing recipes for Urban Vegan. Since my last post, I have tried: Earl Grey Cookies, balsamic baked beans, orange-soy seitan tenders, chocolate-hazelnut polenta budino, funeral casserole and post-race protein shake. WOAH! lol.
All of the recipes were awesome. I think I screwed up my homemade seitan recipe, so that probably impacted the tenders. The polenta was yummy but didn’t keep well for reheating. Oh, the issues of only two of us!
I would display all the photos, but heck, that would bog down the page!
I also have discovered my cookbooks again. I made Potato and Leek Soup from You Won’t Believe It’s Vegan, Bean Cassoulet from Moosewood and Millet and Spinach Polenta with Sun-dried Tomato Pesto from Vegan with a Vengeance. I have also been looking for recipes online and when I was sick, I found the perfect get-better soup.
I also made chocolate chip cookie dough bites for St. Patrick’s Day for my office. My birthday is in a little more than a week and I wanted to test the recipe I found online. Well, they all went! I didn’t even get one! Serves me right for not saving any! LOL.
I also am developing a vegan version of a recipe that I absolutely love. I got the recipe when I moved into my first apartment on my own and LOVED it so much. But now it isn’t vegan, so I must adapt. Move over, Rachel Ray! That entry is forthcoming, as I still need to do another trial run or two.
This is a short entry, more of a recap, as I have been gone & in my little shell. Well, now it’s time for some spring cleaning and hanging out on my blog more often! Keep posted for more entries soon.
